Now that Halloween has passed, you are probably left with piles of candy you really don’t want to eat (or let your kids eat). There are only so many mini chocolate bars one can handle! Not to mention the questionable ingredients and insane amounts of sugar…
Still, you have a sweet tooth that needs to be satisfied, and all that candy is just calling out to be eaten. Fight the urge to eat the entire stash, while still getting that sweet taste you need, by making your own version of Halloween candy!
This delicious, natural recipe is made with essential oils, honey, and other products that won’t scare you (looking at you, high fructose corn syrup, artificial colors, and “natural flavors”).
Halloween Honey and Ginger Lollipops
- 2 cups granulated sugar
- 2/3 cup organic honey
- ¾ cup filtered water
- 10 drops Ginger Zingiber officinale essential oil
- Pinch of candied ginger, chopped finely
- Olive oil to grease molds
- Lollipop sticks
- Cooking thermometer
- Lollipop molds meant specifically for hard candy (heat-tempered)
Grease lollipop molds with olive oil. Drop a few pieces of candied ginger into each mold; insert lollipop sticks and set aside.
In a heavy saucepan, combine sugar, honey, and water. Insert thermometer (make sure the bottom isn’t touching the bottom of the pan). Cook at medium heat, stirring until all ingredients are dissolved. Remove from heat once thermometer reaches 300 degrees.
Once the mixture stops bubbling, add ginger essential oil and stir. Pour mixture into candy molds, keeping the sticks secure. Let cool completely before removing from molds. If you are having trouble removing the lollipops, run the back of the mold under hot water for a few seconds to loosen the candy.
Wrap in plastic wrap or plastic treat bags and store in the refrigerator or a cool area; enjoy!
